You can make this with a slaw, but I haven't tried making that yet.
Here's the recipe for the fried chicken - approx 350 calories in a serving.
2 tbsp mirin (this is a sweet rice wine adds a sweet syrupy flavour) 2 tbsp soy sauce 2 garlic cloves, finely grated 1 tbsp finely grated ginger 4 chicken breasts, sliced into thin strips 125g (4oz) cornflour Oil, for shallow frying A few spring onions, roughly chopped Cooked rice, to serve
In a bowl, combine the mirin, soy sauce, garlic and ginger. Add the chicken strips then set aside to marinate. Scatter the cornflour on a large plate. Add the chicken strips and turn to coat. Heat 1cm (1/2in) of oil in a frying pan over a medium-high heat. Cook the chicken, in batches for 3-4 minutes, turning until cooked through and crisp. Drain on kitchen paper. Scatter the spring onions and serve with cooked white rice.
