Karen's Sugar Cookies
1C butter or margarine (either one works)
1 1/4C sugar
1 tsp vanilla
1/2 tsp almond extract
3 cups+ flour
1 tsp baking powder
1/2 tsp salt
Beat butter/margarine, then add sugar, eggs & vanilla.
Mix the dry ingredients together then add to wet.
After mixing, form into 2 balls & wrap in waxed paper in fridge - chill for 3 hours.
Roll on floured (hence the "+" on the 3 cups of flour) surface to about 1/4" thick. Cut with cookie cutters. Bake at 375 for about 8 min. Let cool completely before icing.
Icing for Karen's Sugar Cookies
2 egg whites
1 tsp almond extract
2 C icing sugar
1 1/2 tbsp water
Mix well, adding water as you beat. Consistency should be the same as thick enamel or paint. Ice cookies (you should be able to just spoon it over and it will flood and cover the cookie); leave to dry thoroughly (overnight is best) before you decorate. You can use the Wilton food writer markers (which is what I do now that they are available - so easy and no mess) to decorate, or you can do it the old-fashioned way that we used before the markers existed and use toothpicks & fine paintbrushes (I kept a set just for this - not ones that had previously been used in paint!) with liquid food colouring.
Tip: Before I put out the cooling racks for the cookies, I completely cover the work space in waxed paper or something like that. Then when pouring the icing over the cookies, all the extra goes on the paper, and to clean up just roll up all the paper and toss, instead of having to scrub sticky icing off the length of the counter or table.
